Blood orange curd tests with A) hibiscus and B) beet powder added for color. Hibiscus version is fine. Beet version did. Not. Set. Enzymatic action? The powder physically stopping protein bond formation? Coincidence? @BraveTart @kenjilopezalt

@BraveTart @kenjilopezalt Thanks - I’ll try to do a controlled experiment. We roughly divided a curd mixture, added each color to each half and heated to set point, so perhaps the halves were unequal to start with
