La ricotta aporta una textura húmeda, ligera y una acidez muy sutil que equilibra la dulzura en masas y rellenos, convirtiéndola en un ingrediente versátil para pastelería fina y rústica.
La ricotta suele tener exceso de suero. Es fundamental escurrila en un colador de tela o malla fina durante al menos 2 a 3 horas (o toda la noche en heladera) antes de usarla en masas o rellenos donde el exceso de líquido arruine la estructura. Si usas @TregarOk te evitas todos estos pasos.
Para preparaciones finas (como cheesecakes o mousses), procesa o pasa la ricotta por un tamiz para eliminar los gránulos y lograr una textura completamente sedosa.
Combina excepcionalmente bien con ralladura de limón o naranja, extracto de vainilla puro, frutos rojos, pasas maceradas en ron, almendras y especias como la canela o el cardamomo.

Chris Isaak wrote the wound. Lana Del Rey made it feel dangerous again.
The original “Wicked Game” is a strangely private song. Chris Isaak isn't singing to an audience so much as getting caught inside his own obsession. James Wilsey's guitar hangs in the background like heat over an empty road, while that steady beat keeps everything moving without ever really going anywhere.
Then Isaak's voice comes in — low, restrained, almost careful. When he reaches the chorus, that sudden falsetto makes the whole thing crack open.
There is no second person in the room.
That's what makes the Hollywood Bowl performance so interesting.
The studio version is surrounded by atmosphere. The live version takes most of that away. Chris is standing there with an acoustic guitar, and suddenly you can hear the bones of the song: the chords, the pauses, the voice, the words.
He doesn't try to recreate the record.
He doesn't need to.
He sounds like someone who has been singing this song for years and knows exactly where every bruise is.
Then Lana walks in.
And the song changes without her really changing anything.
She doesn't take over the melody. She doesn't turn the chorus into a vocal competition. She simply stands beside him, and that completely changes the meaning of the song.
Because the original “Wicked Game” feels like desire happening inside one person's head.
Now there is someone standing three feet away.
Chris sings it like a confession. Lana's voice makes it feel like an invitation.
That's where the danger comes back.
Watch them closely and there is almost nothing theatrical happening. Chris glances toward her. Lana gives a small smile. They leave each other plenty of space, and somehow that restraint makes the whole thing feel more intimate.
The original sounds like a man trying to understand why he wants someone he knows he shouldn't want.
The live version sounds like he already knows the answer.
And Lana knows it too.
That's the beautiful trick here. They don't update “Wicked Game.” They don't modernize it or make it bigger. They simply put another person inside a song that was originally built around solitude.
The words stay exactly where they were.
The feeling doesn't.
Chris Isaak gave “Wicked Game” its loneliness. Lana Del Rey gave that loneliness someone to look at.
And suddenly, a song we've heard a thousand times feels like something that could still go wrong.
