Concrete fermentation, some of Ontario’s top producers are using this method... why? Fermenting wine in concrete offers excellent thermal stability and micro-oxygenation without adding flavors, allowing the grape’s natural characteristics to shine and enhancing minerality.

Meet the Member! In 2000 Niagara College established the Winery & Viticulture Technician program at the Daniel J. Patterson campus in Niagara-on-the-lake. The program is the 1st of its kind in Canada in that the Teaching Winery facilitates the learning enterprise of the program.
The Niagara Bench region is a hidden gem in Ontario’s wine-growing landscape, offering a unique terroir perfect for viticulture. Nestled along the Niagara Escarpment, this area benefits from a combination of ideal soil conditions, climate, and topography.
