🗃️ Dataset: `id` is UUID; `street` > `address_1`; `state` + `county_province` = `state_province`; `tags` are 🚫
🤖 API: Versioning! ie `/v1/breweries` + above schema changes,
🗒️ API will be backward-compatible until TBD!

This update includes the changes:
- `id` is now a UUID (replaces `obdb_id`)
- `address_1` replaces `street` for consistency
- `state_province` combines `state` and `county_province`; intended to act as the geo admin level below country (i.e., admin level 2)
- `tags` is removed
