When @COP29_AZ delegates observed a significant shortage of plant-based options, exorbitant surcharges for plant milks in coffee, and instances of animal-based food being mislabeled as vegan, the @ProVeg_Int team took action.
They engaged with the conference organizers to address these issues and successfully implemented meaningful changes. As @lanaweid explains, their efforts led to noticeable improvements.

✨Ingredients✨
For the rice:
* 2 cups uncooked short-grain rice
* 2 cups water
* ⅓ cup rice vinegar
Walnut paste:
* 250g walnuts
* 4 cloves garlic
* 1 tsp utskho suneli (blue fenugreek) - optional
* 3 tsp white wine vinegar
* Fresh coriander leaves
* Salt to taste
Topping:
* 500g eggplants
* 2 nori seaweed sheets
* Pomegranate seeds for garnishing
* Vegetable oil for frying
For serving:
* Soy sauce
🌱Instructions🌱
1. Combine rice and water in a large pot. Bring to a boil over medium-high heat. Once boiling, reduce heat to low, cover, and simmer until the rice is cooked. Stir in ⅓ cup of rice vinegar once done.
2. To make the walnut paste, blend the walnuts, garlic, utskho suneli, white wine vinegar, coriander leaves, and salt in a food processor or using a mortar and pestle (add a splash of water if the paste is too dry).
3. Slice the eggplant into even strips and fry in oil on both sides until soft and golden.
4. Shape the cooked rice into small oblong portions.
5. Top each rice portion with a slice of eggplant and a spoonful of walnut paste. Wrap with a strip of nori and garnish with pomegranate seeds.
