Student journals in Canvas? Create group set and place each student in a group. Assign a discussion to each group. Only one student will be contributing to that discussion, which can serve as an ongoing journal entry, time stamped and can contribute using all RCE tools.

Students can also markup in student app. Also, if teachers allow submission type=file upload students can take a pic and send seamlessly.
