We ate sugar for 200 years before anything went wrong with it.
1700: 4lb a head a year.
1800: 18lb.
1900: 90lb, and the working man took it in his tea 6 times a day.
Obesity in 1900: about 3%. Diabetes rare enough that a doctor could name his cases.
1911: the first tin of cottonseed oil sold as food goes on the shelf. Mazola corn oil, the same year.
1960s: soybean oil in everything with a wrapper.
2000: the seed oils are a fifth of the calories in America.
Then the sugar started counting. Every gram of it doing damage it had not managed in two centuries of trying.
1999: sugar consumption peaks and starts to fall.
2020: it is down about 15% from that peak. Obesity is up from 30% to 42% over the same years.
Sugar went down. The waistline went up. The oil never moved off the shelf.
Sugar is guilty. It is guilty of exactly what it did, which was making a body already wrecked by the oil worse. It was never the one who kicked the door in.
They arrested the accomplice, put a tax on it, and left the ringleader in the fryer with a heart-healthy sticker on.
Rachel was twelve when the abuse started. She says two police officers put her in the back of a police van on Cowley Road. Then, in uniform, in the back of that police van, one of the officers sexually assaulted her.
Think about what that tells you about this scandal.
These girls were being raped by gangs of men while the institutions supposedly there to protect them were not just looking the other way, some were joining in. In town after town, city after city, police men were involved in gang raping children.
Oxford eventually convicted 21 men. There was not a police officer amongst any of them.
Survivors in Oxford believe hundreds of perpetrators remain free. Across the country, the numbers are at least in the tens of thousands. Fathers, cousins, uncles and brothers. All walked away free. Protected because of who they were and protected because of who else benefited from what took place.
Britain can barely tell you how many men it convicted. No one should be surprised that it cannot tell you how many men raped the children. Or how many of the child rapists were police men.

Your lungs are lined with saturated fat. Without it, every breath would collapse them like a wet bag.
Every cell membrane in your body is about half saturated fat, because that is what gives a cell a wall instead of a puddle.
Your brain runs on it. The insulation on every nerve is built with it.
Breast milk is nearly half saturated fat. Handed the job of designing the first food a human eats, nature filled it with the thing you were told to fear.
Your bones need it to get the calcium in.
Your immune system uses it. The fats in a mother's milk that kill bacteria in the baby's gut are saturated, the same ones in coconut and butter.
Your liver makes it. Eat a plate of bread and the surplus comes out the other side as saturated fat, because that is the form the body chooses to store energy in when it is allowed to choose.
Every animal on earth stores fat as saturated fat. Every animal that eats another animal has eaten saturated fat for 500 million years.
Every human before 1911 cooked in it: butter, lard, tallow, suet, dripping, ghee. It was the only fat in the kitchen and heart attacks were a curiosity.
In 1961 the American Heart Association declared war on it.
In 1977 the government joined in.
The nation swapped it for seed oil and margarine on instruction.
Obesity tripled. Diabetes went from one in a hundred to one in ten. Heart disease stayed the number one killer, with a bigger budget.
The fat that lines your lungs, walls your cells, wraps your nerves, feeds your baby and stores your energy has been on a government watch list for 65 years.
Mission accomplished.

You cannot make retinol out of a carrot, not properly. She can.
A tractor cannot work that slope. She can.
A mower cannot take the bracken and leave the heather. She can.
A fertiliser bag cannot hatch a dung beetle. She can.
A laboratory cannot turn rainfall into protein. She can.
She takes 0.6kg of protein a person could have eaten and hands back a kilo of it, better than what went in. Nothing else in the food system returns more than it was given.
There is a policy document open somewhere this afternoon working out how to have fewer of her.
Your porridge oats were sprayed with weedkiller a fortnight before harvest, on purpose, to kill the plant while it was still standing. Scotland invented the trick.
A dying crop dies evenly. The whole field ripens on the same day, the plant pulls its last moisture into the grain, and the combine goes through once instead of three times. The grain is cut and bagged a few days after the drenching, which is how it gets into the bag intact.
1980s: Scottish farmers start killing standing cereals with glyphosate to dry them. Canada and the American Midwest copy it.
2015: the World Health Organization's cancer agency classifies glyphosate as a probable human carcinogen.
2018: independent labs find it in 43 of 45 conventional oat products.
2019: the same labs find it in all 21 oat cereals and bars sold to children.
2020: Bayer puts up 10.9 billion dollars for around 100,000 people with non-Hodgkin lymphoma.
2023: the EU bans pre-harvest spraying outright. Britain carries on.
2026: Bayer offers another 7.25 billion, paid out over as much as 21 years, and Britain's licence decision lands in December.
Eleven billion in settlements, a second one on the table, and a public consultation still deciding whether it is acceptable to spray it directly onto food four days before that food is harvested.
Now the part that should ruin your morning. The residue does not sit evenly through the grain. It concentrates in the bran, the outer layer, which is the part sold to you as the reason to eat the stuff at all.
Whole is worse than white. The healthier you have been trying to be, the more of it you have eaten.
The oat milk in the flat white you ordered instead of dairy was dried on the stalk by the compound Bayer is paying billions to stop hearing about. Lovely leaf on it, though.

Britain feeds around 12 million dogs a diet that is mostly cereal, and the first four ingredients on the bag are things a wolf would have to be starving to touch.
The animal in your kitchen is Canis lupus familiaris, close enough to a wolf to interbreed and produce fertile pups. We did not invent it. We met a predator at the edge of a carcass somewhere between fifteen and forty thousand years ago, worked out we were both after the same thing, and struck the oldest deal in human history.
That deal was meat from day one. The wolves got the scraps off large kills. We got a nose forty times better than ours, an early warning system, and something that would hold a boar at bay while a man closed in with a spear. Both parties hunting the same fat animals for the same reason, and every bit of it is still bolted to the dog asleep by your feet.

- A short gut with fast transit, built for a dense meal
- Stomach acid down near pH 1 with food in it
Turn a bag of dry food over and read it in order. Maize. Wheat. Rice. Meat meal somewhere below the lot. Extruded at high temperature into little shapes and then sprayed on the way out with fat and flavouring, because otherwise the animal will not go near it.
The palatant is on the outside. The manufacturer knows precisely what a dog wants, and it is not the maize.
Every gundog man and every farm collie owner in the country already knows this. An entire raw feeding industry runs on it and nobody calls that extreme. It only became extreme when somebody made the same argument about people.
So feed the animal what the animal is. Meat and fat as the base, raw meaty bones for the teeth and jaw, a little organ, eggs, and the drippings off your own pan instead of down the sink. Then look at the coat and the smell in a month.
It is the same species that ran down a mammoth with you.
Stop feeding it corn.
