It's the carrier after that can change it to data, doesn't matter how it's sent to the middle man, the final delivery is what counts.

How about a simple test, try Google recovery on your ATT phone number and then after midnight, see if it shows in logs?

ATT doesn't show my messages there either, likely only showing purely SMS.

Mine shows no messages at all when I have 100+ message conversations with a couple of people.

The Usage must only be counting actual SMS'es.

So those are likely just messages when you had no 3g/5g service.
