I add in splash of vinegar before the stock. Vinegar cools and adds liquid (preventing burned veggies) and the acid helps to deglaze anything stuck to the bottom.

Could get too acidic. You can balance acid with sweetness (sugar, maple syrup, honey eg) or being the ph balance down with baking soda.

@erikafloydxo We use chemical disinfectants today and airtight seals to prevent infections and ensure that only our chosen yeast gets in (most wild yeast will not make a great brew). But they didnt have that suff in ancient times. I imagine infected brews were common and they just dumped them
