I like the idea of tags but I don’t like the coloring. I think it’s better to have a grey dot as the tag button that shows a dropdown with colored tags. Each note then can have only one tag and the tag is displayed as a colored dot not colored note. So that tags can be invisible for people who don’t want them but still usable for people who need them
