@davidchang the thing that makes me most angry is that Japanese food is widely accepted as high cuisine in US, but it was the Chinese (Cantonese) who brought rice & sushi into Japan (Yayoi, 300 BC). Most Japanese techniques, food styles, originate from Yue Kingdom (Cantonese)
@davidchang if you're ever in SF, but Beaux Dragon has 灌汤饺 if you ask. This dim sum item is impossible to find nowadays, even in HK as it requires a lot of labor. It's a soup dumpling the size of a bowl, inside a different flavored broth (double steamed)
@davidchang I watched your show #UglyDelicious & Wu's Wonton King is one of the places I miss most in NYC. If you order in advance they have a roast duck smoked in pine (黑松鸭) & classic white chicken (白刀鸡) served in room temp. I hope you can try it sometime
