Tonight in Yuci District, Jinzhong, Shanxi山西晋中榆次区, this bowl of local specialty "Peach Blossom Noodles桃花面" kicked off my third ancient-architecture tour of Shanxi for the National Day holiday.
The noodles’ name is actually an elegant twist on its original name, "Refugee Noodles" (逃荒面). In the local dialect, "taohuang" (逃荒, fleeing famine) and "taohua" (桃花, peach blossom) are pronounced almost identically — a word that evokes beauty, spring, and renewal.
Legend has it that during a time of famine, a wealthy family took pity on a refugee and served him a hearty topping made from their leftover banquet: large slices of meat, meatballs, shredded tofu, kelp, and an egg.
The refugee later became wealthy himself, and to honor that act of kindness, this dish became a local tradition.
Today, it stands as Yuci's most famous snack — a bowl of noodles that carries both the bitterness of survival and the sweetness of a new beginning.
