Try making sunflower oil at home and you'll understand everything wrong with seed oil.

To make butter, you pour cream into a jar and shake it for ten minutes.

To make dripping, you roast a joint of beef. It makes itself.

To make olive oil, you crush olives and the oil runs out.

To make sunflower oil, you squeeze a sunflower seed as hard as you like, and nothing comes out.

Corn is about 4% fat. Nobody has ever bitten into a corn on the cob and had oil run down their chin.

To get oil out of seeds like these, a factory crushes them, washes them in a petrol-based solvent, cooks the solvent off, treats the oil with caustic soda, bleaches it with clay, then steams it at around 240 degrees until it stops smelling.

Every fat people ate for two million years could be made with your hands, a fire and a knife.

Seed oil needs a chemical plant and a fire certificate.

If your great-grandmother couldn't have made it in her kitchen, it has no business in yours.

A UK family where both parents work full-time, pay full council tax, and earn enough to be 'doing alright' on paper, can't afford to take their kids to the Tower of London on a Saturday in 2026.

The working family pays the full £200 day out AND covers — through their taxes — the £196 discount the benefits family gets on the same trip.

Whatever the original intention of those schemes, this is the structure most UK working families are now living inside. Pay the full bill, then watch the people next door enjoy the day out you can't take your own kids to.

In 1967 Britain had more electric vehicles on its roads than every other country on earth put together, and they were all delivering milk.

There were tens of thousands of them. The milk float: open sided, battery under the floor, top speed of about 15 miles an hour, and a whine you could pick out in your sleep. It was charged overnight at the depot and was back there by lunchtime.

It was dismantled in about 15 years, because a supermarket could sell milk a few pence cheaper in a plastic jug as a way of getting you through the door.

Every piece of that system is now the subject of a government target for 2040.

It was running in 1967, silently, in the dark, and nobody thought it was worth a mention.

🚨BREAKING: Lisa Domski had spent nearly 38 years at Blue Cross Blue Shield of Michigan when the company introduced its COVID-19 vaccine mandate. Daniel Greaves was found with over 114,000 indecent images of children, mainly little boys aged 3-5years old. Many of these images were the most serious category of abuse.

Rice paddies heat the planet about as much as every aeroplane in the sky, and nobody has made a documentary about your pilau.

A flooded paddy is a man-made swamp. Under the water, with no oxygen, the same family of microbes that live in a cow's rumen break down plant matter and give off methane. It is a rumen with the cow taken out. Rice accounts for around a tenth of all the methane humans cause, and about 1.5% of all greenhouse gases, which puts it level with global aviation.

The response so far:

- Carbon labels on a bag of basmati: none
- Countries taxing it: none

Denmark, meanwhile, will bill its farmers for every cow and pig from 2030.

The cow's methane comes from grass, which pulled that carbon out of the air last spring, on ground too wet or too steep to plough, and it arrives with beef, milk, leather and a fertilised field. The paddy's methane arrives with a bowl of starch.

The chemistry is identical. One of them is a plant, and plants do not get prosecuted. The climate case against your dinner depends on only ever pointing the instrument at the animal.

Raw milk is legal in England, and the law written to make it awkward has accidentally built the best food supply chain in the country.

You cannot buy it in a shop. No supermarket, no corner shop, no deli. A farmer put a vending machine of it in Selfridges, and in 2012 the regulator had it out again.

The rule is that it can only be sold by the farmer, directly, to you. At the farm gate. From his van. At his stall on the market. From a machine in his yard that takes a pound coin and fills your bottle while a cow watches.

The carton in your fridge took a longer road.

Supermarket milk:

- Pooled from hundreds of farms
- Tankered to a plant
- Separated, then reassembled to a number
- Heated
- Forced through a nozzle to smash the fat
- Bottled, trucked, shelved
- Several days old when you pour it

Raw milk:

- One farm
- One herd
- Yesterday

The farms that sell it are inspected twice a year. The herd has to be tested clear of TB and brucellosis. The milk is sampled. There is a name on the bottle and a track up to the house. And the person answerable for every pint is standing in front of you in wellies, which concentrates a farmer's mind in ways a tanker never has.

So a law meant to keep it off the shelves has done the one thing the rest of the food system can't manage. It has put the customer and the ruminant in the same yard.

The late Queen drank it all her life, from her own herd at Windsor. When William and Harry were at Eton she is reported to have had it bottled and sent over to them. Nobody rang the Food Standards Agency. Nobody suggested the heirs to the throne be switched to something from a tanker.

The milk tastes of something. The cream sits at the top in a thick yellow collar. People who've been "lactose intolerant" for twenty years drink a glass and wait for a punishment that doesn't arrive.

Find the farm. Take a bottle. Meet the ruminant.
