Nice sear on the 61 day aged beef cooked on the Feugos Ivar ๐ฎ๐ฅ
Been ageing this @RangersValley Black Onyx beef from @hixsonmeatldn in @spice_punch ager. We butchered it this week and this was my first cook of this incredibly marbled sirloin. The crispy fat was just glorious.

And now finally we get the reward of eating some. Seemed only right to give it some live fire treatment ๐ฅ
Tried some lovely Warendale Wagyu brisket cooked up on the Cactus Jack from ProSmoke ๐ฅ
Ended up throwing down a platter of bits with help from Spice Punch and MrRusselDaviesBBQ. Ran the Meater+ for the first time too and have to say I was impressed. Brisket was๐๐ป @Wdale_WagyuLtd
The @spice_punch guys dry aged some beef for 97 days recently and kindly gave us a little joint to cook up. Seasoned with salt and into the @KamadoJoe and this is what we got. Lovely aged flavour and nice and tender too ๐๐ป
