Bear Grylls has drunk his own urine on television, eaten a raw goat testicle and squeezed the fluid out of a camel's stomach to stay alive, and then he went home and wrote a vegan cookbook.

That is not me being unkind. It is a description of one man's actual working week, and the gap between the two halves of it is the most interesting thing in modern nutrition.

Think about what his day job is. He is not a chef and he is not a wellness figure. He is a man who teaches people what to put in their mouths when the alternative is death by Thursday, and that curriculum has one direction of travel and has had for as long as anyone has written it down. Fat first, because fat carries nine calories a gram against four for everything else. Then organ. Then meat. Then, a very long way down the page, plants, which every survival handbook does list and every survival handbook also tells you will not keep you alive.

Grylls knows this better than almost anyone breathing. He knows why the trappers of the Hudson's Bay Company starved to death with full stomachs, eating all the rabbit they could catch, because lean meat with no fat on it kills a man in about a month. He knows that the beginner who spends his first afternoon gathering dandelion and sorrel has burned more energy than the leaves will ever give him back. He knows that when you are down to nothing but rabbit you eat the liver, the brain, the marrow and the eyes, and if you want greens you open the animal's stomach and take what is already in there.

He has done all of it on camera. Repeatedly. For twenty years.

Then he sat down at a desk in a warm house, in 2016, and told everybody else to eat the leaves.

And here is where it stops being funny, because the diet he was recommending to the public then went and did to him exactly what the manual says it would. He told GQ his health tanked on it. Raw juice and vegetables through a covid recovery, kidneys in agony, close to stones, sleeping badly, weak. The most competent survivor on television, laid out by his own advice, in a house, with a fridge.

So he did what he would have done in a jungle. He looked at the evidence in front of him and changed. Steak, liver every other day, eggs, butter, fruit. He says he has never been better.

The man who eats anything to stay alive spent seven years telling comfortable people to do the one thing he would never do in the field, and it took his own kidneys to point it out.

The manual was always there. He wrote most of it.
