I went immediately carnivore. I'm a professional chef. I learned to love salt and use it profusely in place of herbs and spices. I don't get bored with it and I have an entire cabinet devoted to herbs and spices.
Initially, I would eat two kinds of meat or more for variety. I have ended up sticking with mainly beef. It's become more satisfying. I do still enjoy fatty pork, bacon, sausage and eggs.
At first I didn't eat enough. It took a while to work my way up to a pound of meat a day. I'm fairly small at 5'2" and starting weight of 139#. I am now at 113# over a years time.
I started carnivore because I thought my life was over. I had poorly managed Hashimotos, adrenal dysfunction and extreme brain fog and fatigue as well as menopausal.
I was desperate. Along with a holistic doctor and supplements in the beginning, I am doing 98% better.
I would commit to 3 months to begin with. It takes a good month to figure out how much to eat and get adapted. Yes, there will be diarrhea in the beginning.
I don't have a gallbladder so sometimes if I eat a ton of fat, I will have diarrhea.

I also have experienced a huge reduction in my sinus issues. I have very small nasal passages and irritants, etc. Can cause me serious congestion. I went from taking a claritin every day to a few times a month.
I do use raw milk occasionally and I use butter and heavy cream, otherwise not much dairy.
After my year anniversary, I have no plans on changing my diet. I enjoy it, I feel better by every single metric, and at 54 years old, I am fitter and healthier than I've been since I was a teenager. To top it off, my 54 year old belly is flat again! I was told by a doctor that due to my thyroid, I would forever struggle with my weight.
