Yes, true. But a healthy metabolism and healthy gut can handle a handful of fresh peanuts now and then.
An unhealthy gut should probably stay off of all forms of seeds, beans, nuts, legumes, and grains UNTIL they heal.
I don't believe a unhealthy gut can heal as fast or as well on a diet that's only focused on satiety alone and not targeted at gut health. Even though MOST the satiety foods are going to be gut healthy, a good number of them are not, and with the gut, it really does have to rest to heal.
TL;DR: Yes, it's the 1) concentration, 2) chemical processing, and 3) oxidation of seed oils that makes them bad.
But here's the TL, if you like:
All nuts, seeds, grains have fat in them and almost all of them are going be higher percentage-wise in linoleic acid than animal-based or fruit-based fats (butter, tallow, coconut, avocado, etc.).
Linoleic acid is a natural fat, but Nature puts it in it's proper place for all living creatures eating their natural diets, which is in VERY LOW amounts in the natural foods that humans (and other monogastric mammals) eat.
The problem is that humans will go and harvest seeds or nuts and squeeze little bits of oil out of THOUSANDS of them in order to make a few tablespoons of oil. So they are creating a potent concentrate of this oil, and you are consuming the equivalent of THOUSANDS of peanuts worth of oil.
But that's not bad enough. In order to extrude out the oil, they have to heat the oil to destabilizing levels using a chemical solvent called N-Hexane (which is also not good for you).
Because linoleic acid is a polyunsaturated fat, it reacts to high heat by receiving oxygen in it's double bonds. This oxydizes the oil and the oil goes bad. Its smell becomes rancid. So in the they have to chemically deodorize it until it has a 'neutral flavor profile' (one of the reasons why it's a quick and easy crutch for chefs who don't really care about the importance of oil flavor pairing.)
Finally, at this stage, the oil still looks darker like motor oil, so they chemically bleach the oil to give it a pleasant presentation in their plastic bottles.
By the time it's on the shelf, as much as 10% of the oxidized oil has toxic waste byproducts like aldehydes that are incredibly inflammatory to the human body.
But they get used in the deep fryer and continue to get oxidized. The oil is used over and over many times. That toxic sludge gets soaked into the french fry, donut, and fried batter, and then into you.
Your body can heal from this attack if it's only done every once in a blue moon, but sadly, these oils have become the de facto standard of our global food supply (and especially soybean oil in the US).
But now what of those people who say this oil is okay in moderation? They would never tell you to eat thousands of peanuts, or soybeans, or grape seeds. So when they are super concentrated into an oil, these things are already exponentially out of proportion to what would be considered moderation.
So yes, it's the concentration and industrialization of these oils, not the handful of fresh peanuts you want to have.
