@GoodVideoBye It's all the rib loin of the beef.... 1 side the filet is fat. it gets smaller as it goes. all the way to where it's just a bone-in New York strip essentially, and no fillet left. I like the 3rd cut into a loin the first has the most filet but it also has gristle in the strip.

@GoodVideoBye Not sure if my numbers are exactly correct I'm sure you could Google it or something... But a t-bone is a t-bone a porterhouse is also a t-bone but to be labeled a porterhouse the filet has to be I want to say an inch and 3/4 wide? And the whole steak at least an inch thick??
