Red mullet, mussels, mousseron mushrooms, spinach. It might be small, but the mousseron packs quite a punch, with a big, rich flavour not unlike its much larger cousin, the cep. This dish uses them judiciously with the densely fleshed mullet and earthy, silken spinach. #newdish
