Champurrado is a traditional Mexican drink made by blending chocolate with corn-based atole. Crafted from cacao, corn masa, cinnamon, and panela, it is prepared across Mexico using local ingredients and time-honored techniques.
This champurrado is made by Luz Pazos in San Pablo Yaganiza, in the Sierra Norte of Oaxaca. Passed down through her grandparents and mother, it was once reserved for special celebrations such as weddings, fiestas, and Day of the Dead, where it is still placed on the altar.
The process begins by grinding cinnamon first for the perfect texture, followed by cacao and panela to form a rich chocolate paste. The paste is shaped into small rounds, traditionally decorated with a lemon leaf, then dissolved into hand-ground corn atole.
