Milling your own flour at home is seriously amazing, and not a very big lift, then or now.
Better bread, better nutrition, lighter footprint, easier digestion...

@realprophetguy Tech availability across budgets and skill levels has come a long way in the last 14 years. Amazing how cringe even the semi-pro stuff from a few years ago sounds to today's ears.
