@krishashok There are people who have celiac disease and there are also people who are just sensitive to gluten (probably to one of the proteins that combine to form gluten), but everybody else is pretty much insensitive but will not run the blind challenge test to determine the truth.

@TestKitchen I sort of don’t want to disclose this but I feel altruistic at the moment: top blade steak is very close to being as tender as a fillet and medium rare if you sous vide it at 130°F for 24 hrs, then torch it to get a nice surface color.

@NPRKelly I will experiment with the waterbath and confirm you need to buy them hard and bright green (and with a stem). They are ripe when the stem wiggles easily. Most avocados go bad because poorly educated "customers" squeeze them after they have started to ripen and you can't tell.
