MY lovely hubby announced last night that we are going out for lunch today, so there will be no foodie lunch post this week.
Still, I have the roast lamb to come one week & this week I have a rhubarb pie filling to put together.
Today, however is the day I start to make ALL our own bread, full time, using the stone ground flour.
Until now, I have been experimenting with the bread maker, with different settings & have been on something of a fact finding mission, about using the stone ground.
So there is much more to come!
The last time my work had a potluck, I made 24 oatmeal chocolate chip cookies and when we all went to eat, some mofo took every last one of them! My plastic container was missing the lid and of course everyone was all disappointed how shitty that was and shocked that I suggested smelling peoples breath 😆
So this time I am bringing cheap assed macaroni salad from Walmart, because I can't afford to make that many cookies again just for one greedy mofo
Smoked BBQ pork loin, homemade augratin potatoes, homemade garlic butter drop biscuits, and a homemade from scratch chocolate cake with cream cheese frosting. Its my bonus daughters (my daughters best fired since first grade) birthday and she wanted me to cook instead of going out. (I’m not a baker. It’s tastes great but doesn’t look the prettiest)
I got bored with eggs. So I turned them into waffles. 😂
Day 4 of the EGGSperiment, and scrambled eggs aren’t gone forever, but your girl needed a damn texture change.
That’s actually part of what I’m testing here. How many ways can I eat essentially the same simple foods without feeling like I’m eating the same meal over and over?
Today: soft, buttery, egg-forward waffles topped with runny fried eggs.
And that yolk running down into the waffle?
Yeah. We’re keeping this one.
I modified Dustin @KetoSimple s waffle recipe to make mine more egg-forward and buttery.
Egg-Forward Waffles
3 whole eggs
2 egg yolks
3 Tbsp melted butter
4 tsp beef gelatin
Blend everything in a NutriBullet or high-powered blender until as smooth as possible.
Preheat and grease your waffle iron. Let the batter sit for a few minutes so the gelatin can bloom and the batter begins to thicken. Don’t wait too long or it’ll get too firm to pour.
Pour into your waffle iron and cook until done. Mine took about 7 minutes in my four-waffle Dash and made 4 waffles with just a little overflow.
These are intentionally softer and more egg-forward than my sturdier waffle recipe. If you want something heavier and sturdier for sandwiches or toppings, use my original version with more beef gelatin.
For breakfast I topped mine with 3 fried eggs with runny yolks and Everything Bagel seasoning.
And scrambled eggs? I’ll circle back when bacon, kielbasa and the rest of the gang are invited back to the party. 😂

Repurposing leftover dinner rolls as slider buns is great, but pulling pork shoulder at five in the morning takes serious dedication to the craft. That kitchen must smell unbelievable right now
