I was honored to join the @beardfoundation Spring 2026 Bootcamp for Policy and Change these past few days in Carnation, WA.
We dug into advocacy, sustainability, and food systems, the daily decisions that shape how we cook, source, and lead.
What stays with me most is the room: chefs, restaurateurs, and farmers from different paths, all pushing toward better solutions.
Grateful to @CarnationFarms for the hospitality, and to @NimanRanch for being part of the work we do back home.
@fergindc I’ll have chicharrones as a special on Sunday, 05/17. I used to run them daily using the breastbone from spare ribs. Now with @NimanRanch, the ribs come pre trimmed, better flavor, raised right. Sometimes you lose to win 🤜🏼🤛🏼
Sourcing ethically matters as much to me as how we cook.

@JTTallman We were activated by World Central Kitchen to support TSA workers at this time, but we have consistently served all federal workers during past shutdowns. We would be happy to expand our support in coordination with WCK.
Back at 2Fifty BBQ for the Brisket...grabbed a Dino rib for fun too, but the brisket is so briskety brisklicious. One of my top restaurants, merch purchase worthy.
Even if you live close pretend you are on a road trip because the town of Riverdale Park Maryland is cool, and then in a neighborhood you'll find BBQers and this restaurant. Its like Austin Texas in Maryland. @2fiftybbq@Fernando_GoPe
