"The market is under-supplying tsunderes" is 100% accurate, but this goes further - into people realizing that J.K. Rowling had (has?) some real weaknesses as a writer.
What people are realizing with the "Malfoid" thing is that a Malfoid x Harry romance would have worked shockingly well as a load-bearing core for the overall narrative in a way Harry's romantic entanglements in the actual series never were. Not just as "plot-relevant," mind you, but thematically and metaphysically as well. This ties into Draco being based on Rowling's own grade-school bully; he's *written* in a feminine register, and moreover his relationship with Harry *is* load-bearing in the later books; and yet he never really gets much of an arc; remaining mostly one-note through the series. To Rowling's credit Draco is *not* one-dimensional and Rowling does a good job showing that despite the limited-third-person perspective locked to Harry (e.g. Draco's friendship with Moaning Myrtle, revealed via the Marauder's Map,) but he doesn't really change through the story - nor does he really change Harry, which feels a bit underwhelming given Harry's growing obsession with him in book six.
A good foil is every bit as important a character as a primary romantic interest. Especially with an episodic structure like the Harry Potter novels have; with each book having its own end-game villain, a foil like Draco provides a through-line adversary for the whole narrative. His family connection to The Big Bad Evil guy makes this even more potent; allowing him to serve as a tangible, present representative of the gathering darkness that Harry is all but fated to eventually confront - which also mirrors the same darkness that's in Harry's own soul, and has been a crucial plot factor since early in the story.
This is why Draco's eventual fate seems underwhelming. He gets in way over his head with the Bad Guys, but never truly makes a choice - as Rowling said in an interview, "there's a real moral cowardice to Draco" but he's not "wholly bad." And so he's always on the fence - he doesn't become a true nemesis to Harry, nor does he provide a cathartic parallel by confronting the darkness and choosing to stand against it alongside him. And it's not *bad* for characters to do this; most people aren't going to make some great, seismic binary choice between Good and Evil - but given he's the closest thing Harry has to a true foil in the story, it leaves the far end of the narrative hanging in open air. It feels like Harry spent a lot of time shadow-boxing; that thread is never resolved, much less in a way that has powerful synergy with the greater forces at work in the story and world.
Rowling was never a great prose crafter, but I can forgive her that, right down to her hilariously on-the-nose naming schemes, as grade schoolers don't need divine prose and her ability to craft an interesting, enticing world is both far more important and incontestable given the results. Nor is she bad with characters; when they're on-screen their presence fairly pops off the page. It's her plotting that's weak, and this retroactively damages her characters as plots are driven by character choices and motivations. Book 7 really made that plain; soon as the characters were away from the structured confines of Hogwarts they started teleporting around willy-nilly (as wizards are wont to do) but it was Ron showing up right when he was needed, with a spare wand in his pocket to replace Harry's broken one, that really made me scoff.
What makes this all interesting is that Harry Potter is the closest thing to a cultural touchstone for an entire generation; one work of literature read by almost everyone of a particular age cohort. So even those not inclined towards literature, who've "never read another book" post-Potter, remember it well - and so this present Malfoid trend is a rare example of literary analysis escaping its usual grottoes and percolating through the minds of the masses.
