Milk-Cooked Crispy Fried Chicken

Ingredients

10 chicken legs
4 cups whole milk
1 small onion, sliced
3 garlic cloves, smashed
1 bay leaf
1 teaspoon salt
1/2 teaspoon black pepper

For the coating

2 cups all-purpose flour
1/2 cup cornstarch
1 tablespoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon cayenne pepper, optional

For frying

vegetable oil, enough for frying

Directions

1. Cook the chicken in milk
Add the milk, onion, garlic, bay leaf, salt, and black pepper to a large pot.
Place the chicken drumsticks into the pot.
Bring to a gentle simmer over medium-low heat.
Cook for 18 to 20 minutes, or until the chicken is almost fully cooked.

2. Cool the chicken
Remove the drumsticks from the milk and place them on a tray or plate.
Let them cool for 10 to 15 minutes.
Pat them lightly with paper towels so the coating sticks better.

3. Prepare the seasoned coating
In a large bowl, mix the flour, cornstarch, paprika, garlic powder, onion powder, salt, black pepper, and cayenne if using.

4. Coat the chicken
Roll each drumstick in the flour mixture until fully covered.
Press the coating onto the chicken to create a thicker crust.
For an extra craggy texture, lightly sprinkle a few drops of milk over the flour mixture before coating the last pieces.

5. Heat the oil
Pour oil into a deep skillet or pot and heat to 350°F (175°C).

6. Fry until crisp and golden
Carefully place the coated drumsticks into the hot oil, a few at a time.
Fry for 6 to 8 minutes, turning as needed, until deep golden and crisp on the outside.

7. Drain and rest
Transfer the chicken to a wire rack or paper towel-lined plate.
Let it rest for 5 minutes before serving.

8. Serve
Serve hot with fries, mashed potatoes, biscuits, or your favorite dipping sauce.
