Falling behind on updates. Social media is hard. 😬 I’ll catch it up later but Isolation Dinner #15 hit the Tex Mex spot with fajitas. Ya know, just like the traditional Korean abuelitas used to make. 😆 All sides made from scratch. Think I used every dish and pan in the house!

Isolation Dinner #11: Kimchi Spam Fried Rice. Another Korean family favorite. Cooked short grain rice, spam, kimchi and it’s juice, sunny side up egg, finish with quality sesame oil. Egg yolk is one of nature’s best sauces. Plated photo for my boy @spencef
Isolation Dinner #13: sauce is a meal-changer! Make your own aioli instead of using store-bought mayo. Egg yolk, acid, oil. My go-to: lime juice & zest, yolk, garlic cloves, wasabi, drizzle neutral-flavor oil in blender. Pair it with simply-roasted chicken or salmon.
Get that sweet, sweet Maillard reaction on your broccoli by cutting them small (crispier) and even, being heavy handed with your fat of choice, giving them lots of separation (otherwise they just steam) and roasting on high heat.
Isolation Dinner #9 brings up the topic of roasting vegetables. “Why doesn’t the vegetables I roast at home taste like at the restaurants?” Industry secret: fat, generous amounts; pork or duck. That and heavy duty roasting pans.
I’m sure there’s a single cell analogy I could shoehorn here but check out the difference between sweatshop chicken eggs and eggs we got from a family friend’s chickens. The taste couldn’t be more different.
Isolation Dinner #8: Instant Ramen Korean Style. Throw out the rules! Cook as directed and halfway in toss in sausage/hotdog/spam, kimchi, mushrooms, dumplings, eggs, even ‘murican cheese (not trolling). Suuuuper unhealthy but tastes like home!
During this time of COVID-19 isolation, I will be adding levity to my Twitter by posting more food-related posts temporarily. I’m an ex-professional chef and it’s been a ‘fun’ challenge to transition to cooking for my young children while also being ingredient-limited.
Dinner: Isolation-day-7-spaghetti-bolognese-because-we-didn’t-have-chili-powder-so-I-couldn’t-make-chili. It’s like the pandemic family home version of Iron Chef at this point given what ingredients we have access to.
Switch gears: make banana bread pancakes instead! Notes:
1. Batter doesn’t behave like pancake batter. Low heat & smaller pancakes are better
2. Use lots of butter - 4 words: crispy banana bread crust
3. Accept now: they’re going to be ugly. That’s ok 👍🏻👍🏻
We had a lot of overripe bananas - so we decided to make banana bread with the kids. Cream 1/2c butter, 1c sugar, 2 eggs, 3 overripe bananas, 1/2t vanilla. Gently fold in 1c flour and 3t baking powder.
Bake in oven at 350... realize you have no baking pan. 😤🤯🤬
