The packers didn't wait around either. They built newer, cheaper plants in Mexico. Quality on par with ours. None of the EPA or Department of Labor compliance American processors carry.
The supply chain isn't following the closure back to Texas. It's staying south, permanently.
Beef is one bad trade cycle from becoming the next avocado. Grown in Mexico. Owned in Mexico. Shipped back at whatever price they name.
That's not history repeating. That's a country handing over its own food supply.

For years, I’d spot the occasional wasp drifting through my yard. I left them alone, figuring they’d return the favor. Every now and then one would sting me, but it was rare enough that I didn’t make an issue of it.
Then I started seeing more of them. Before long, I realized they were building nests in the eaves, under the deck, and in the woodpile. The population exploded. What had been a minor annoyance became a daily hazard. The more numerous they grew, the more territorial and aggressive they became.
Eventually I faced a clear choice: I could tolerate the growing risk of being stung, not just me but the entire neighborhood or I could go after the nests and deal with the painful, messy fight that would surely follow.
By the way… this isn’t really about wasps.
I’m building what has not been fully revealed - the temptation is to believe anyone anywhere can afford anything and that poverty is catering to everyone everywhere.
And the reality of small scale, artisan production is the releavation of both modern economics and real economic budgets.
It’s a problem.
My goal is to make available exactly what we sell at a cost that supports real small scale family farming at an undeniable quality while also supporting others to build that same growth in their own backyard and community.
Then to add home goods, soaps, salves, honey, teas and more.
And then also to add a non profit sector for those who genuinely, legitimately need support,
You can grow these. But you might also concede it’s easier to buy from us. But I also want to help those in your community grow and produce the same products.
This is the reality of America - it’s complicated.
Fiat currency. Subsidization. Dilution under allowable regulation. It’s a mess.
It’s time to bring back real American farm and homesteads.
