@artisanswiss Other than possibly assisting in the breakdown of the cheese by holding the b linens closer to the cheese, it didn't appear so. Mostly, it serves as a way to keep the cheese together once it breaks down: It's very soft

I had to visit the cheese cathedral, Neal's Yard. Sadly the producer of Edmund Tew was flooded, so none is available for a few weeks. But I obtained a St Cera (washed rind cows milk) and a St Tola (goats milk).
