Japan deliberately built an environment where it’s hard to get fat and easy to eat well: every school hires a professional nutritionist, kids eat fresh, balanced meals prepared that day (no packed lunches allowed), and processed food is a tiny minority of the diet.
They transformed their entire food culture, and it worked.
