The most prominent use case for weth is so you can approve a contract to move tokens on your behalf when some other event happens

You can never approve native eth to move out of your wallet, but you can approve erc20 tokens like weth

Think of a scenario where you want to make an offer on an NFT through OpenSea - you are giving the OS contract the ability to move that weth out of your wallet if the seller accepts - you can't do this in a trustless and automatic way with eth, but you can with weth
