Nobody, and that's the design. good question, and it's the one that shaped the design.
The proof is already a hash on the contract; the owner writes it, not us. So if we're gone, the seven days keep counting and anyone can trigger the release, including the owner from a block explorer.
What does go with us is the photo behind that hash, and the sponsor's ability to look at it and object. The escrow then falls back to its default, which is to pay.
We chose that direction on purpose: better the sponsor loses a chance to dispute than the person who did the work doesn't get paid.
But you've named the real gap; the evidence itself still lives with us. Pinning proofs to something durable is on the list, and this is a fair nudge to move it up.
However, we should point out that we’re here to stay.
