What I like about not using LLM-based tools is writing code is so tedious you are looking for solutions to write less code or no code at all and you usually find them. Which improves your project dramatically in a longer run.

Biggest reason tbh is that "you" have no idea what a sustainable workflow is.
If you don't know about specification, version control, debugging, static analysis etc. Then its very easy to make a program that is entirely unmaintainable.
Choice of language might also play a role, most AI will happily output python or JavaScript without being asked and depending on the job it might be good, okay or absolutely awful.
It does not matter which domain you apply AI to, the specific domain knowledge required to make a good product still exists. If you make AI art, then anatomical, architectural, perspective etc. knowledge is pretty much required to get a usable result.
The reason people are making fun of AI vibe products are very much tied to them having domain knowledge and the viber not possessing the same, but it won't take long for people with domain knowledge to leverage the tools and whizz right past everyone else doing things traditionally and you won't be able to tell because they revise the product until there are no flaws.
Even if you use AI, you still need to be aware of the domain you apply it to.
