Roasted Sweet Potato Soup (easy+super tasty)
🪷 Ingredients
• 1½ tablespoons extra virgin olive oil
• 1 medium onion, chopped
• 2 carrots, chopped
• 2 cloves garlic, grated
• 1 inch ginger, grated
• 1 teaspoon ground cumin
• 1 pinch red pepper flakes
• 4 cups vegetable broth, add more or less based on your desired consistency
• 2 pounds sweet potatoes, peeled and chopped
• 1 large apple, peeled and chopped
• 1 teaspoon salt
• 2 twists black pepper
• ⅓ cup coconut milk
• 2 tablespoons apple cider vinegar + 4 lime wedges to squeeze on top and cilantro for garnish, optional.
🪷 Instructions :
• Sauté the onion and carrots in olive oil for 3 minutes. Add the garlic, ginger, cumin, and red pepper flakes; cook for 1 minute.• Add the broth, sweet potatoes, apple, salt, and pepper. Bring to a boil, then simmer for 20 minutes until tender.• Blend until smooth.• Stir in the coconut milk and apple cider vinegar. Simmer for 5 minutes.• Adjust the seasoning and serve with lime juice, cilantro, and chili oil.
