What happens to milk in the stomach? 🤔
Milk undergoes major structural changes when digested 🥛

I'm so glad to see our review about fungal and plant cell wall digestion published in Trends in Food Science & Technology @ELSfoodscience

In the first human trial, using PulseON® in white wheat bread lowered the blood glucose response to the bread by 40%, without major changes to the taste, texture or appearance of the product.

Proud of our PhD student @Raf_Col_ showing his #scicomm skills. Check out his video and blog to find out more about his research on mycoprotein @TheQuadram@QuornFoods
Meet PhD student Raffaele 👋 Raffaele is researching the health benefits of mycoprotein, otherwise known as Quorn™.
In our brand new #blog, Raffaele explains how mycoprotein influences digestion and promotes #health effects: https://t.co/5ZUoisNRLZ #Plantbased#MeatlessMonday
Are you interested in the simulation of human digestion? In this latest review, you can read about the different in vitro digestion models and in silico simulations as well as in vivo-in vitro comparisons.#fooddigestion#Infogest

Super proud that our paper investigation the impact of plant structure in peas on blood glucose control is out in Nature Food. Well done to the partners @TheQuadram@JohnInnesCentre@UofGlasgow https://t.co/GErBhEWC7f
Microscopic world: The cell walls of #mycoprotein are excellent sources of dietary #fibre that retain nutrients. However, the intestinal enzymes are able to diffuse and digest #protein whilst the cell walls remain apparently intact.

Check out our latest paper showing how α-amylase can diffuse, and remain sequestered, within the fungal cell wall of #mycoprotein. This promotes a reduced carb digestion that can explain how #foodstructure controls postprandial glucose homeostasis

Today is #WorldMilkDay! Have a look at how milk behaves in the human stomach. Milk forms clots that affect the digestion of nutrients. Thanks to @ShaneODonnell22 for swallowing a wireless camera to visualise (Cork, 2017). This was part of my PhD research @teagasc & @TheQuadram
The standardised protocol of semi-dynamic in vitro digestion for food is finally out! Thanks to all the co-authors of the INFOGEST network that make it happen😀
