Descriptions are for more than just physical outward appearance. They are also used for other things like describing someones personality for example.

Why say a blonde man or a brunette woman? Why say blue, green, or brown eyes? Because they describe things, that's why. 'Cis' is a descriptive word, it describes something to give more clarity.

When I was that age, sex ed had full diagrams of the reproductive systems both F and M and it was talked about in detail.

In fact, as far as sex ed goes this is pretty vanilla. Besides, as far as I know, libraries won't let kids check out anything they want.
