We are excited to introduce Lombard Lagered, a beer that we brewed with local Cascade hops from our friend Randy and then fermented cold with our house yeast blend before lagering for 8 weeks. The resulting beer is crisp with Pilsner malt and light floral, citrusy hop character.
We’re celebrating French saison and Bière de Garde today with Thiriez Extra and Au Baron Cuvée des Jonquilles, two absolute classics. Thiriez is in bottles and small pours, and Jonquilles is now on tap!
We were thrilled to find out that we were named amongst the favorite saison breweries in @CraftBeerBrew! Thanks to all who have supported us, and look forward to many more fun saison projects in the coming year.

The first in a new series of beers incorporating flowers & teas, Flowerfield #1 is a blend of beers with chamomile & lilac flowers and subsequently aged in a gin barrel. It’s dry, floral, & citrusy with up-front juniper and herbs that fade into fresh lilacs and oak.

New lager alert! Now on tap is Andechs Spezial Hell, a festbier from our favorite German brewery, and also have bottles of their doppelbock. Spezial Hell is malt forward with bread crust and backing earthy hops.
Tomorrow at 11 AM we will start the event for our Is/Was collaboration with a Q&A! We will have all four variants on draft and our two versions available to go. The Is/Was versions will be distributed around the Chicago area.

Introducing Eighth Continent #4, a Farmhouse IPA brewed with a hefty dose of Motueka and Nelson Sauvin hops and fermented in stainless with a blend of saison strains and Brettanomyces. The resulting beer is dry and citrusy with plenty of white grape with a light dose of honeydew.
We are only 9 days from our event with Is/Was Brewing (10/23 with Q&A at 11 AM)! Mike and team killed it with the beer and label design for their version. While you can’t drink this until 10/23, you can be sure to stop by the taproom this weekend to drink plenty of saison 🍻
