Why don't middle class and even upper middle class people in India understand that 99% of their ancestors were living in extremely frugal circumstances and the dietary choices they made were not a result of optimizing for what was most healthy or nutritious but rather for what was most easily available and could provide them their daily caloric requirement very cheaply. That's why some of the most nutritious foods we know today like mutton/lamb were consumed by them only as luxuries on special ocassions.

If they had been living on household incomes of 15-20 lakh per annum then they wouldn't have selected for alu parantha and daal chawal as their go to meals - these would have been seen as meals of the working classes who couldn't afford or access any better.
