So I sorted out my pantry. I have an idea. Red curry coconut sauce chicken lasagna. Instead of layers roll the noodles w/ chicken & veggies (corn?). Cover with a curry coconut milk sauce & mayB (a nut based vegan) mozzarella on top. I have everything but chicken & fake cheese.

This year I grew cilantro. I was thinking of trying to make a cilantro pesto with almonds or walnuts instead of pine nuts. The basil just didn't survive this year. I had some fails in the garden. My globe thistles didn't globe. My hollyhocks couldn't give an Eff to flower.
