You are right that the US is not number 1 in terms of the number of varieties of cheese available in stores. However, it is in the top 5, and possibly tied for 2nd place, depending on how one measures it.

But the idea that the US only has American cheese, or that we don't have many kinds of cheese available, or that we don't know much about cheese, is very far from the truth.

@ladyloodeeloo We have never found a *single* curriculum that works for us across the board.

Rather, we've tried different things, and we've settled on different things for different kids and different grade levels. So, a sort of Frankenstein approach.
