I want to show newer users to an easy way to setup an SFU with as little editing of Janus files as possible. Probably I should stress this is for learning, not production. Thanks!

One thing I was trying to achieve was deploying Janus with zero config or modifications. So I didn't use self-signed certs, nor HTTPS direct to Janus. Just the default Janus HTTP running on 8088. Caddy can pull off a lot with a small config file.

In the demo video no self signed certs are used, rather Letsencrypt certs are used courtesy of Caddy. Caddy is akin to Nginx here, serving static content like you said, but also doing HTTPS to HTTP proxying using Letsencrypt certs.
