The "oysters are dirty sewage filters" argument is nonsense
About 95% of oysters you eat are farmed, which is a GOOD THING (not pulled from random ocean water).
All oyster production in the US runs under the National Shellfish Sanitation Program. Waters pass bacterial testing before any harvest is allowed. Fecal coliform is tested and the limit is extremely low and areas get shut down the second they exceed it.
They're tested for algae toxins too. Areas close before harvest even begins if levels get close to the safety limit.
Oysters don't "eat" sewage. They filter phytoplankton and organic particles and actually reject a lot of what they don't want before it's ingested.
Commercial farms are also away from sewage outfalls and industrial pollution on purpose. Contaminated oysters wouldn't pass testing and couldn't be sold.
Yes, there is some risk to people who are immunocompromised, but oysters are one of the most nutrient dense foods on the planet (and are delicious)
