@robsterowski@Beervana @revnatscider But the limit is 70 hl. Once they go over, they pay duty on everything, including the first 70 hl. To make a decent profit, they must go way over 70 hl to achieve economy of scale, or else stay under and try to sell an ultra-high-end product. Am I right, @wearehawkes?

@robsterowski@Beervana @revnatscider Thanks for explaining it. I think more carbonated ciders in the 5.5-8.5% range would be produced if it weren't punitively expensive. Plus the made-wine issue for any added ingredients.
@robsterowski@Beervana @revnatscider I think you have it backwards. The tax on cider is twice that of beer. Plus innovative products like hopped cider are considered made-wine.
@PomeFruits In beer, the "skunky" reaction with hops is well understood. This is a different chemical reaction that is not as well understood or appreciated. I'm interested to learn more!
