Honey Roasted Sweet Potatoes with Feta and Pecans
Serves: 4-6 • Prep: 15 minutes • Roast: 30-35 minutes • Total: ~50 minutes
Ingredients
For the sweet potatoes
3 medium sweet potatoes, scrubbed and cut into thick chunks or wedges
2 tbsp olive oil
2 tbsp honey
1/2 tsp cinnamon
1/2 tsp smoked paprika
1/2 tsp dried thyme or Italian seasoning
1/2 tsp kosher salt
1/4 tsp black pepper
For the topping
1/2 cup pecans
1/3 cup crumbled feta
1-2 tsp fresh thyme leaves or chopped parsley
Extra drizzle of honey, for finishing
Pinch chili flakes, optional
Flaky salt, optional
Instructions
1. Prep the oven
Preheat oven to 425°F (220°C).
Line a large sheet pan or baking dish with parchment for easier cleanup.
2. Season the sweet potatoes
In a large bowl, toss the sweet potatoes with olive oil, honey, cinnamon, smoked paprika, thyme, salt, and black pepper until evenly coated.
3. Roast
Spread the sweet potatoes out in a single layer.
Roast for 25 minutes, then turn them gently.
Add the pecans to the pan for the last 8-10 minutes so they toast without burning.
Roast until the sweet potatoes are tender with caramelized edges and the pecans are fragrant.
4. Finish
Transfer everything to a serving bowl or platter.
While still warm, scatter over the feta.
Drizzle lightly with a little more honey.
Finish with fresh thyme, parsley, chili flakes if using, and a tiny pinch of flaky salt.
Tips
Don’t overcrowd the pan or the sweet potatoes will steam instead of roast.
Cut the pieces fairly evenly so they cook at the same rate.
Add the feta after roasting so it stays creamy and bright.
For extra depth, use hot honey instead of regular honey.
Easy variations
Add a splash of balsamic glaze for a more savory-sweet finish.
Swap feta for goat cheese.

For the steak
1 1/2 to 2 lb flank steak
2 tbsp olive oil
2 tbsp lemon juice
2 garlic cloves, minced
1 tsp kosher salt
1/2 tsp black pepper
1/2 tsp smoked paprika
1/2 tsp dried oregano
For the basil pesto
2 cups packed fresh basil leaves
1/3 cup grated Parmesan
1/3 cup toasted pine nuts or walnuts
1 garlic clove
1/3 to 1/2 cup olive oil
1 tbsp lemon juice
1/4 tsp salt
1/4 tsp black pepper
For the topping
1 large ball burrata
Small basil leaves, for garnish
Extra olive oil
Fresh cracked black pepper
Pinch flaky salt

Instructions
1. Marinate the steak
In a shallow dish or zip bag, mix olive oil, lemon juice, garlic, salt, pepper, smoked paprika, and oregano.
Add the flank steak and coat well.
Marinate for at least 30 minutes, or up to 4 hours in the fridge.
Remove from the fridge 20 minutes before grilling.
2. Make the pesto
In a food processor, combine basil, Parmesan, nuts, garlic, lemon juice, salt, and pepper.
Pulse a few times.
With the machine running, drizzle in the olive oil until smooth but still a little textured.
Taste and adjust salt or lemon if needed.
3. Grill the steak
Preheat a grill or grill pan to high heat.
Pat excess marinade lightly off the steak.
Grill for 4 to 5 minutes per side for medium-rare, depending on thickness.
Aim for an internal temp of about 130 to 135°F (54 to 57°C).
Transfer to a board and rest 10 minutes.
4. Slice
Slice the steak thinly against the grain.
5. Assemble
Arrange the sliced steak on a platter.
Spoon pesto generously over the steak.
Tear the burrata over the top in soft pieces.
Finish with small basil leaves, black pepper, flaky salt, and a drizzle of olive oil.
6. Serve
Serve warm with grilled greens, roasted potatoes, crusty bread, or a simple tomato salad.
Tips
Slice against the grain or flank steak can feel chewy.
High heat gives the best char without overcooking the inside.
If you do not have burrata, use fresh mozzarella or whipped ricotta.
For extra brightness, add a little lemon zest over the finished dish.

Add cherry tomatoes or roasted red peppers for more Mediterranean flavor.
Swap basil pesto for arugula pesto.
Use skirt steak instead of flank if that is what you have.

1/2 tsp kosher salt
1/4 tsp black pepper
2 tbsp olive oil, for cooking
For the piccata sauce
2 tbsp butter
2 garlic cloves, minced
1 1/4 cups chicken broth
1/4 cup fresh lemon juice
2 tbsp capers, drained
1 tsp Dijon mustard
1 tbsp flour mixed with 2 tbsp water, or 1 tsp cornstarch mixed with 1 tbsp water
2 tbsp chopped parsley
1–2 tbsp heavy cream (optional, for a silkier sauce)
Salt and black pepper, to taste
For serving
Lemon slices or wedges
Extra parsley
Mashed potatoes, pasta, rice, or roasted vegetables
Instructions
Make the meatball mixture
In a large bowl, combine ground chicken, panko, egg, Parmesan, garlic, parsley, lemon zest, lemon juice, salt, and black pepper.
Mix just until combined.
Form into 14–16 meatballs.
Brown the meatballs
Heat olive oil in a large skillet over medium heat.
Add the meatballs and cook for 6–8 minutes, turning often, until golden on most sides. They do not need to be fully cooked yet.
Transfer to a plate.
Start the piccata sauce
In the same skillet, melt the butter over medium heat.
Add garlic and cook for 20 seconds.
Pour in chicken broth, lemon juice, capers, and Dijon mustard.
Stir and bring to a gentle simmer.
Thicken the sauce
Stir in the flour slurry or cornstarch slurry.
Simmer 1–2 minutes until slightly thickened and glossy.
If you want a slightly creamier look like the photo, stir in 1–2 tbsp heavy cream.
Finish cooking
Return the meatballs and any juices to the skillet.
Spoon sauce over them, cover loosely, and simmer 6–8 minutes until the meatballs are cooked through and tender.
Finish and serve
Sprinkle with chopped parsley.
Serve with lemon slices and extra sauce spooned over the top.
Tips
Ground chicken is soft, so lightly oil your hands when rolling the meatballs.
Don’t overmix or the meatballs can turn dense.
For a stronger piccata flavor, add a little extra lemon zest at the end.
If you love capers, add an extra spoonful for more salty-briny punch.
