There are close to a billion pounds of invasive catfish destroying the Chesapeake Bay right now.
So Maryland schools decided to serve them for lunch.
Blue catfish were introduced to Virginia rivers in the 1970s and have since colonized the entire Chesapeake Bay watershed, consuming an estimated 59 million pounds of native crabs, shrimp, fish, oysters, and clams every single day.
The blue crab, one of the most iconic species in the region, is now at some of the lowest population levels in recorded history.
Maryland's response was one of the best food system solutions I've come across.
Instead of expensive removal programs that go nowhere, they built a local supply chain, licensing commercial fishers to catch the catfish, connecting them with processors and institutional buyers, and landing them directly in school cafeterias as breaded catfish sandwiches, fish cakes, and fillets.
Students enjoyed the food, and they understood their lunch became an act of ecological restoration.
This is exactly the kind of thinking our food system needs more of, local sourcing that solves an environmental problem, supports independent fishermen, puts real protein in schools, and cuts out every industrial middleman in the process.
