My guess:
Gust Monk’s ability is CWI, but its cost is paid on resolution as per 740.4.a.2.a (“Costs within instructions that appear in any later part of the trigger effect are paid on resolution.” <- banish CWI appears in the [Y] section of “When [X], [do Y]” structure of trigger effects), which means Sacrifice cost can be paid before the banish.

1. Karthus comes back, then if no further reaction, Sacrifice resolves
2. Banish does not go off, so CWI isn’t paid, and Assault isn’t given

I’m fine validating fears in case that moves the needle of Cover being held accountable to their concerns.
