@BenMandelker Mussels notes! To debeard, hold mussel in one hand & pull the beard out w other hand (away from shell) and arc up and down - it should loosen easily. Careful w tap water- it’s chlorinated & can kill ‘em- use ice from the monger. Skip the flour step w farmed- no sand to disgorge

@av @kroggemann @WilliamsSonoma No, you really cook it all at once: about 3-4x water:pasta (by volume) and anything you want to cook with it. It takes the same amount of time (~11-13min) and the pasta is done and sauced. In this case, the onions will mellow, tomatoes will burst and pasta will be tender
