Nievita Zambrano is a traditional cook from Ecuador with more than 60 years of experience preserving ancestral Ecuadorian cuisine, especially the highly acclaimed ancestral gastronomy of Manabí.

She has dedicated her life to keeping alive the flavors, ingredients, and cooking techniques that have been passed down through generations.

Today, she shares this culinary heritage together with her grandson, @yeikomoreira, who records and documents her cooking to help preserve and share the traditions of Ecuadorian gastronomy with the world.
