In Australia, the Italian baristas make a different style of espresso than they do back in Italy. They use a lower brew temperature of around 90ºC instead of 95ºC. They still use their dark roasted beans: the lower temperature helps avoid over extracting.

@HEB The Intelligentsia coffee bags (I'm delighted that you are stocking this coffee) on the shelf have a "best by" date on a sticker on the bag. They do not, however, display a roast date. I'm generally only going to purchase coffee that is within 10 days of its roast date.
