ONE PAN SKILLET CHICKEN POT PIE
2 tb olive oil
1 small yellow onion, finely diced
3 stalks celery, finely sliced
2 large carrots, finely chopped
1 1/2 cup white mushrooms, sliced
3 cloves garlic, mashed
1 Ib rotisserie chicken, shredded
4 tb butter, unsalted
1/3 cup flour
1 1/2 cups chicken broth
1/2 cup milk of choice or heavy cream
1 tb bouillon (optional)
2 tsp dijon mustard
2 tb fresh thyme, stems removed & chopped
2 tb fresh rosemary, stems removed & chopped
3/4 cups frozen peas
11/4 cups parmesan cheese, grated
1 1/2 sheets frozen puff pastry
1 egg
Sesame seeds for garnish
Instructions
In a large oven safe skillet heat the olive oil over medium heat.
Once the oil is hot, add the onion, carrots, and celery.
Sauté for a few minutes and then add the mushrooms and garlic.
Once the mushrooms have cooked down, add the rotisserie chicken, stirring again.
From there, add the butter and continue stirring until fully melted then add the flour.
It will look dry, but trust the process. Next, add the chicken broth, milk, bouillon (if using), mustard, thyme and rosemary.
Continue stirring until the sauce begins to thicken. Add the peas and cheese, stirring until fully incorporated.
Remove from heat. Roll out thawed puff pastry so it is thinner than it comes-cut squares or rectangles and place them in a single layer on top of the pot pie.
Whisk egg and brush on top and sprinkle with sesame seeds.
Bake for 30-35 minutes until golden and puffy!
Enjoy
This case deserves NATIONAL ATTENTION.
Elizabeth Hernandez is a nurse practitioner and mother of five serving 20 YEARS in federal prison after being convicted in a massive Medicare fraud case.
But her side of the story raises some very serious questions.
Hernandez worked in telemedicine, reviewing patients and generating medical orders. She says she believed the companies she worked with were legitimate.
According to Hernandez, those orders were then sold and resold downstream, eventually landing with suppliers across the country that she had never worked with.
Then she began noticing something was wrong.
▪️ She says she contacted Medicare after discovering her provider information was being used by companies she didn’t recognize.
▪️ She says she placed a fraud alert on her account.
▪️ She filed a police report.
▪️ She even contacted the HHS Office of Inspector General about another telemedicine opportunity and says she was told she could continue working.
Then the federal government prosecuted HER.
Prosecutors alleged Hernandez knowingly participated in a conspiracy involving more than $134 MILLION in fraudulent Medicare claims.
She maintained that she did not know what was happening with the orders after they left her hands.
She refused to plead guilty to something she says she didn’t knowingly do.
She went to trial.
She was sentenced to 20 YEARS.
Meanwhile, her family says people who actually operated companies involved in the scheme cooperated with prosecutors and received significantly shorter sentences.
And there’s another piece of this story that I want answers about:
Her family says that AFTER her conviction, a separate government investigation concluded she had committed no fraud and closed its case.
If that documentation says what her family claims it says, it needs to be examined publicly.
Elizabeth Hernandez has now spent nearly three years away from her five children.
I want to know:
What evidence proved she knowingly participated in the downstream fraud?
Why did people allegedly closer to the operation receive shorter sentences?
What exactly did the subsequent government investigation find?
And most importantly:
Does a 20-year sentence fit her actual level of culpability?
This case deserves another set of eyes.
Actually, it deserves millions of them.

UPDATE (Bad): Ellis County Commissioners voted 4-1 to propose a PROPERTY TAX INCREASE!!
And this follows a BOMBSHELL admission tonight from (unelected) Ellis County Judge John Wray that the county "lost" approximately 20 million tax dollars!!
The Commissioners who voted FOR the proposed property tax hike were: Judge John Wray, Louis Ponder, Randy Stinson, and Kyle Butler.
The only Commissioner to vote for the taxpayers and AGAINST the proposed tax hike was Matt Zajic.
There will be a vote on final adoption soon, and I'll keep you posted.
If you live in Ellis County, tell your Commissioners "NO TAX HIKE!"

🚨 WOW. This brave Christian migrant from Iran walked up and WENT BERSERK on the proposed Islamic Center in McKinney, TX — straight to the council's face
The whole building ERUPTED after his dire warning:
"I'm a Sharia law survivor from Iran."
"I'm TELLING YOU, this is a BAD idea and you're going to REGRET not listening to people like us who lived under Sharia law!"
"I'm here to tell you this is a DANGEROUS ideology you're allowing in your country. Every country that is Islamic now, it used to be a Christian country and we were soft Christians."
"And we allowed these people to come in, bring their Sharia law into our countries and slowly k*ll us off left and right!"
"Let me make it very clear to you. Christianity is a personal relationship with God...Islam is Sharia law. Religion and state, which is not even compatible with the American thing and when these people will lie to you, to manipulate you."
"Because whenever Islam is little, they will lie to you and tell you they come in peace. This is level one!"
"Level two is what's happening in UK right now, where you have two-tier policing, where you have the blasphemy laws, Islamophobia, racism, all this nonsense that they talk about."
"Any time you criticize Islam, they will use the race card, but every country has this disgusting ideology inside their country, including my own country, Iran, Russia, Islamophobia is another made up bullsh*t because they don't want you to criticize their death cult!"
"If you question that disgusting book, they're get k*lled over it, just like my friends were apostates imprisoned or dead right now in Iran!"
HE NAILED IT!!!
I expect Mamdani's public grocery stores will not offer significant price discounts relative to budget grocers. Thinking about his mandate they make things cheaper reminded me of "parchment guarantees" and this speech from Justice Scalia.
